Ingredients

  • 2.00 scoop(s) (32.400g)    Medi-Weightloss® Vanilla Premium Protein
  • 1.00 cup(s) (112.000g)    almond flour
  • 0.25 cup(s) (100.000g)    Swerve® Granular
  • 1.00 tsp (12.000g)    xanthan gum
  • 0.50 tsp (4.600g)    baking powder
  • 0.25 tsp (6.000g)    salt
  • 1.00 large (33.000g)    eggs, whites only
  • 0.50 cup(s) (240.000g)    unsweetened almond milk
  • 0.50 tsp (4.200g)    vanilla extract
  • 0.50 Tbsp (15.000g)    Walden Farms sugar-free pancake syrup
  • 1.00 ounce (28.350g)    chia seeds

Directions

  1. Preheat oven to 275 degrees F and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together vanilla premium protein, almond flour, swerve, xanthan gum, baking powder, and salt.
  3. Stir in remaining ingredients until dough texture is achieved.
  4. Divide the dough in half and turn first half onto large piece of parchment paper. Top with another piece of parchment paper and roll out about ¼ inch thick.
  5. Use cookie cutters to cut into desired shapes. Place on prepared baking sheets.
  6. Bake for 20 minutes or until golden brown and just firm to the touch. Remove and let cool for 5 minutes, then transfer to a wire rack to cool completely.
