Ingredients

  • 4.00 large (33.000g)    eggs, whites only
  • 0.25 cup (145.000g)    fat-free cottage cheese
  • 0.25 cup (244.000g)    Pumpkin Puree
  • 1.00 packet(s) (37.700g)    Medi-Weightloss® Buttermilk Cinnamon Pancake Mix
  • 0.50 tsp (1.700g)    pumpkin pie spice

Directions

  1. Pre-heat a waffle iron.
  2. Combine all ingredients in a blender and blend until smooth.
  3. Pour ½ of the batter onto the hot waffle iron. Spread batter to edges and close lid.
  4. Cook for about 4 minutes, until waffle is crisp and golden.

Additional Notes

**Optional:** Top with sugar-free maple syrup. This will add an additional miscellaneous serving to your Journal It! instructions.
