  1. Blend protein, blueberries, ice cubes, and almond milk until smooth.
  2. Pour into electric stand mixer with whisk attachment and add xanthan gym.
  3. Whisk for 6-8 minutes until mixture gains volume.
  4. Eat immediately!

Additional Notes

Garnish with fresh lemon zest (optional). This makes a large serving but does not freeze well. Enjoy it all or share with a friend!
