Ingredients

  • 1.00 cucumber (8-1/4") (301.000g)    cucumber(s)
  • 1.00 ripe (201.000g)    avocado
  • 1.00 tbsp chopped (10.000g)    red onion
  • 2.00 Tbsp (14.000g)    lime juice
  • 20.00 large, peeled and deveined (7.000g)    shrimp, raw
  • 1.00 Tbsp (0.360g)    Old Bay® Seasoning
  • 2.00 Tbsp, chopped (14.000g)    cilantro

Directions

  1. Slice cucumber into thin (approx. ¼ inch) rounds.
  2. In a small bowl, mix avocado, onion, 1 Tbsp of the lime juice, salt, and pepper.
  3. Heat a grill pan over medium-high heat and spray with nonstick cooking spray.
  4. Season shrimp with Old Bay® and 1 Tbsp of lime juice. Cook shrimp 2-3 minutes per side or until done.
  5. Top each cucumber round with avocado, 1 shrimp, and cilantro. Makes 20.
