Ingredients
Directions
- Slice cucumber into thin (approx. ¼ inch) rounds.
- In a small bowl, mix avocado, onion, 1 Tbsp of the lime juice, salt, and pepper.
- Heat a grill pan over medium-high heat and spray with nonstick cooking spray.
- Season shrimp with Old Bay® and 1 Tbsp of lime juice. Cook shrimp 2-3 minutes per side or until done.
- Top each cucumber round with avocado, 1 shrimp, and cilantro. Makes 20.
