With St. Patrick’s Day only a few days away, it is time to bring on the green grub. This year, celebrate by cooking some of these Medi-Weightloss® approved healthy green dishes!

 

Spinach Pie

Serving Size: 1/6 of yield

Ingredients:

1 medium chopped onion

1 Tbsp, minced garlic

1 package spinach (16 oz)

1/3 cup egg whites

1 ½ cup cottage cheese

6 oz shredded nonfat mozzarella

Directions: Preheat oven to 350 degrees F. Coat pan with cooking spray and place over medium-high heat. Sauté onions and garlic for 3-5 minutes, then stir in spinach and heat through. Set aside. In a bowl, mix egg whites, cottage cheese, mozzarella, and salt and pepper to taste. Coat a pie dish with cooking spray and pour in vegetable mix. Spread cheese mixture on top and bake for 45 minutes to 1 hour.

 

Green Goodness

Serving Size: 1 yield

Journal It! ½ serving of vegetables ½ serving of fruit

Ingredients:

1 scoop Vanilla Premium Protein

¾ cup frozen, strawberries

½ cup spinach, raw

½ cup unsweetened almond milk

1 tsp fresh-squeezed lemon juice

Directions: Using a blender or your Blender Bottle, mix ingredients to desired consistency. Enjoy!

 

Shepherd’s Pie

Serving Size: 1 yield

Journal It! ½ serving vegetables 1 serving fat

Ingredients:

3 oz ground beef (97% lean)

¼ cup frozen green beans

½ tsp Worcestershire sauce

1 packet Hearty Potato Stew

1 Tbsp cream cheese

¼ tsp paprika

¼ tsp parsley

Directions: Place a skillet over medium-heat and coat with cooking spray. Season ground beef to taste and brown in skillet. Toss in green beans and cook for 2 minutes, stirring continuously. Stir in Worcestershire sauce. Prepare the Hearty Potato Stew according to package directions, and then stir in cream cheese. Spread beef mixture into broiler-safe dish and top with potato stew and paprika. Broil on high 1 minute. Top with parsley (optional) and enjoy!
